Here in Pittsburgh we eat more than 11 times the pierogies of any other city in the nation, according to a survey by Pennsylvania-based Mrs. T's Pierogies, the largest producer of frozen pierogies. Typically, a standard pierogi is stuffed with mashed potatoes, but homemade varieties can be filled with any number of other things, such as apples or prunes, meat, spinach, mushrooms, or sauerkraut. The dough is pretty simple -- just flour, salt, eggs and butter...plus a little sour cream (a secret of many Pittsburgh pierogi makers) to keep it tender. Then try your hand at creating a unique filling of your own, and stuff!
